1 shallot, finely chopped.
1 tablespoon grainy mustard (like Dijon).
1 tablespoon fresh lemon juice.
1 tablespoon sherry vinegar (white wine, apple cider, or plum vinegar will all work).
1/2 teaspoon each finely chopped fresh thyme and tarragon (or whatever herbs on hand you enjoy)
Coarse salt and freshly ground pepper.
1/4 cup plus 2 tablespoons extra-virgin olive oil.
Mix shallot, mustard, lemon juice, vinegar and herbs in medium bowl
Slowly whisk in olive oil while whisking the whole time.
Pour into airtight container to store (6oz mason jars work great!)
